Sustainably raised for a minimum of 8 years, under California sunshine, our sturgeon swim in pure waters and consume only natural, high quality feed. This process results in healthy fish that are full of nutrients. When ready, we select and handcraft the finest cuts, then cure and triple smoke them for 8 10 hours in small batches using the simplest ingredients.
